Perfection... Attained



For Valentine's Day my husband made me something I prize far, far (far) more than diamonds or roses: dessert.  Not just any dessert, mind you, this dessert -  Salted-Caramel Six-Layer Chocolate Cake.  


It's okay if you cry tears of joy whilst eating it.  I do.


Recipe from Martha Stewart Recipes

Ingredients

  • For The Cake

    • Unsalted butter, room temperature, for pans
    • 3 cups all-purpose flour, plus more for pans
    • 3 cups granulated sugar
    • 1 1/2 cups unsweetened Dutch-process cocoa powder
    • 1 tablepoon baking soda
    • 1 1/2 teaspoons baking powder
    • Coarse salt
    • 4 large eggs
    • 1 1/2 cups low-fat buttermilk
    • 1/2 cup plus 2 tablespoons safflower oil
    • 2 teaspoons pure vanilla extract
  • For The Caramel

    • 4 cups granulated sugar
    • 1/4 cup light corn syrup
    • 2 cups heavy cream
    • Coarse salt
    • 2 sticks cold unsalted butter, cut into tablespoons
  • For The Frosting

    • 1/4 cup plus 2 tablespoons Dutch-process cocoa powder
    • 2 sticks unsalted butter, room temperature
    • 1/2 cup confectioners' sugar
    • Coarse salt
    • 1 pound semisweet chocolate, chopped, melted, and cooled
    • Garnish: flaked sea salt, such as Maldon

Directions

  1. Preheat oven to 350 degrees. Make the cake: Butter three 9-inch round cake pans, and dust with flour, tapping out excess. Sift flour, granulated sugar, cocoa, baking soda, baking powder, and 1 1/2 teaspoons course salt into the bowl of a mixer. Beat on low speed until just combined. Raise speed to medium, and add eggs, buttermilk, 1 1/2 cups warm water, oil, and vanilla. Beat until smooth, about 3 minutes.
  2. Divide batter among pans. Bake until cakes are set and a toothpick inserted into the center of each comes out clean, about 35 minutes. Let cool in pans set on a wire rack for 15 minutes. Turn out cakes onto racks, and let cool completely.
  3. Make the caramel: Combine granulated sugar, corn syrup, and 1/4 cup water in a medium saucepan over high heat. Cook, without stirring, until mixture is dark amber, about 14 minutes. Remove from heat, and carefully pour in cream (mixture will spatter); stir until smooth. Return to heat, and cook until a candy thermometer reaches 238 degrees, about 2 minutes. Pour caramel into a medium bowl, stir in 1 teaspoon coarse salt, and let cool slightly, about 15 minutes. Stir in butter, 1 tablespoon at a time. Let cool completely.
  4. Meanwhile, make the frosting: Whisk together cocoa and 1/4 cup plus 2 tablespoons warm water in a bowl until cocoa dissolves. Beat butter, confectioners' sugar, and a generous pinch of coarse salt in a clean bowl with a mixer on medium speed until pale and fluffy. Gradually beat in melted chocolate and then cocoa mixture until combined. Let stand for 30 minutes before using.
  5. Trim tops of cakes using a serrated knife to create a level surface. Cut each in half horizontally to form 2 layers. Transfer 1 layer to a serving platter, and spread 3/4 cup caramel over top. Top with another cake layer, and repeat with remaining caramel and cake layers, leaving top uncovered. Refrigerate until set, about 1 hour.
  6. Frost top and sides of cake in a swirling motion. Sprinkle with sea salt.

As Valentines' Day approaches and romantic things abound ev-er-y-where, I thought, 'What would be THE most romantic thing ever?"  And of course I concluded, "An Emma c.d.!" But since I already have a box or two of those here, I thought, "What would be the SECOND most romantic thing ever?" And I concluded, "a cottage vacation."  


Since my munchkin is less than seventeen months old, I don't think I'll be leaving him for any extended amount of time any time soon (I barely can handle two hours away from him!), but I still like gazing at these romantic destinations. 


Sigh.

Will It Be Spicy? Will It Be Tangy?



Several of the books I read growing up had canning and preserving in it so I had such a longing to experiment with making jams or preserves!  Those gorgeous jars filled with colors and shapes sounded so romantic to me.  

When they started playing this commercial on the Cooking Channel, I felt that longing all over again.

The Limb is Mightier Than the Thumb

Feature Friday

I don't know if a movie should count as a Feature Friday (I originally planned for it to only be about blogs and shops), but hey! I make the rules on this here blog! So, I am featuring a movie I watched last night and loved! I'm sure you all have seen It Happened One Night before but it was the first time I'd ever seen it and it made me wonder why I hadn't already watched it a million times.

It is so funny, so sweet and super sexy. It's about a rich strong-willed heiress and a brash newspaperman on a road trip from Miami to New York - hijinks and romance ensue, of course! Both Claudette and Clark are so appealing and the dialogue is adorable!

This is one of the best scenes in the movie and hopefully will inspire you to watch it!

Here we are - third song in the month of loooooove!* It's written by the brilliant Leonard Cohen but the version I'm most familiar with is Madeleine Peyroux's. The lyrics are so magnetic over the deceptively simple melody. Such a great song!

A Month of Loooooove

I have decreed February a month of loooooove! All my song sketches will be lovealicious and my posts will be, umm, filled with love too! I've featured some of the loveliest lovey things I've seen lately for you to sigh and ooh and ah over.

I love Valentine's Day. True, I never celebrate it romantically except once in high school when my first boyfriend brought me a bouquet of white tulips and took me out to the Rainforest Cafe. The fact that he was gay didn't make it any less romantic.

Anyways, I know lots of people who find Valentine's Day a contrived holiday invented by greeting card companies but I am all for celebrating pretty much any holiday; one that celebrates hearts, love, candy and flowers is a sure thing!

Paris at Seven...

I recently sent a bunch of songs over to a film professor to see if any of his students or coworkers needed a composer/songwriter for any of their projects (hopefully a John Lasseter or Pete Docter in the mix!).

This is one I wrote for the reel - I adore accordion and think it belongs in far more music! This song made me think of busy rainy evenings, which we've been so lucky to have several of the last couple days. Such a welcome break from the endless Florida heat!

Olive Juice Photography!





For my new Etsy custom song shop, I wanted to capture certain feelings for different types of songs and for the romantic songs, I looked for photos that perfectly showed that kind of love that marries romance and friendship.
